Spicy oatmeal cookies for autumn days recipe

Ingredients
- 220 g room temperature butter
- 170 g soft brown sugar
- 60 g white sugar
- 2 eggs
- 1 tsp vanilla essence
- 185 g flour
- 1 tsp baking soda
- ¾ tsp salt
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ginger
- 270 g rolled oats
- 150 g cranberries
Method
Preheat the oven to 175 °C and line baking tray with baking paper. Cream 220 g of room temperature butter. Add 170 g brown sugar and 60 g white sugar. Mix until light and fluffy texture. Add 2 eggs and 1 tsp vanilla essence. Mix until fully incorporated. Add 1 tsp baking soda and ¾ tsp salt to 185 g flour. Add 1 tsp cinnamon, ¼ tsp nutmeg and ¼ tsp ginger. Mix well. Beat the flour mixture into the butter mixture. Stir in 270 g rolled oats and 150 g cranberries. Spoon 2 tbsp of batter and shape it into a ball. Place 8 cookie balls on one baking tray . Bake the cookies for 12 minutes with top/down heat in the middle rack.
