Morning bites: blinis with cottage cheese and salmon

Ingredients
For blinis:
- 85 g flour
- ¾ tsp salt
- ¼ tsp black pepper
- 1 pinch nutmeg
- 1 egg yolk
- 1 egg
- 150 ml milk
- 120 g potato puree
- 30 g cream cheese
- oil
For topping:
- 150 g cottage cheese
- 100 g smoked salmon
- red caviar
Method
Begin by adding 85 g of flour into a medium bowl, followed by ¾ tsp of salt, ¼ tsp of black pepper, and a pinch of nutmeg. Incorporate 1 egg yolk and 1 whole egg into the mixture. Then, pour in 150 ml of milk, whisking until the batter achieves a smooth consistency. Mix in 120 g of warm potato puree and 30 g of cream cheese, stirring until fully combined. Allow the batter to rest for at least 30 minutes. When ready to cook, place 1 tbsp of the batter into a hot and oiled pan, cooking until it turns golden on the bottom before flipping to cook the other side similarly. Enhance each blini by spreading cottage cheese on top, then garnishing with smoked salmon and red caviar before serving.
