Radish and cucumber salad with spicy cashews recipe
This radish and cucumber salad recipe is perfect when you’re looking for a crisp and zesty dish with just the right mix of spice and freshness!
Ingredients
For salad:
- 1 large cucumber
- 200 g radishes
- 1 stalk of celery
- 2 shallots
- 2 ½ tbsp olive oil
- 1 garlic clove
- 1 tsp lemon zest
- ¾ tsp salt
- ¼ tsp pepper
- 3 tbsp lemon juice
For spicy cashews:
- 90 g cashews
- 1 tbsp olive oil
- 1 tbsp honey
- ½ tsp garam masala
- ¼ tsp chilli powder
- ¼ tsp ground turmeric
- ⅓ tsp salt
Method
In a small saucepan, combine 90 g of cashews with 1 tbsp of olive oil and 1 tbsp of honey. Season the mixture with ½ tsp of garam masala, ¼ tsp of chili powder, ¼ tsp of turmeric, and ⅓ tsp of salt. Cook the cashews over medium heat, stirring often for about 7-8 minutes, until they are sticky. Once done, spread the cashews onto baking paper to cool. Meanwhile, slice 1 cucumber into thin slices, cut 200 g of radishes into small wedges, and thinly slice one celery stalk. Chop 2 shallots and place all the vegetables in a large bowl. In a separate small bowl, mix 2 ½ tbsp of olive oil, one grated garlic clove, and 1 tsp of lemon zest with ¾ tsp of salt, ¼ tsp of pepper, and 3 tbsp of lemon juice; whisk well to combine. Pour this dressing over the vegetables, mixing thoroughly to coat. Transfer the salad to a large serving plate and top it with the spicy cashews, ready to serve.
