Morning Bites: Breakfast granola bars recipe

Not having time for breakfast shouldn’t mean leaving home on an empty stomach. Our breakfast granola bars recipe is perfect for those on-the-move mornings — it brings together crunchy oats, nuts, and a bit of honey to kick off your day right even when you’re low on time.

Ingredients

  • 220 g applesauce
  • 2 eggs
  • 70 g coconut oil
  • 150 g peanut butter unsalted
  • 120 g honey
  • ¼ tsp salt
  • 2 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 130 g rolled oats
  • 60 g dried cranberries
  • 40 g pecans, chopped
  • 40 g roasted and salted pistachios, chopped
  • 1 tbsp rolled oats, for topping

Method

Begin by whisking 220 g of applesauce and 2 eggs in a large bowl until well combined. Proceed to whisk in 150 g of peanut butter, 70 g of coconut oil, and 120 g of honey into the mixture. Season it with ½ tsp of salt, 2 tsp of cinnamon, and 2 tsp of vanilla extract for flavor. Next, fold in the rolled oats and 60 g of chopped dried cranberries into the mix. Pour this batter into an oiled and baking paper-lined square baking tin, measuring 20 x 20 cm, ensuring the batter is spread evenly across the tin. Garnish the top of the batter with 40 g of pistachios, 40 g of pecans, and 1 tbsp of rolled oats for added texture and flavor. Bake the preparation in the middle of an oven preheated to 180 °C, using top/down heat, for 30 minutes. Allow the granola bars to cool completely in the baking tin before removing them. Once cooled, slice the granola slab into 12 equal bars. For storage, keep the granola bars refrigerated in a container with a lid to maintain freshness.
