Delicious and easy to make coconut crusted fish fingers

Ready for healthy, but tasty snack or a light dinner? Crispy from the outside and juicy inside, these coconut crusted fingers are a breeze to make. You just can’t go wrong with this delicious and easy recipe. We bet you’ll like it.

Ingredients

  • 500 g white fish
  • 2 tbsp lime juice
  • 100 ml coconut cream
  • 100 g coconut flakes
  • 50 g panko crumbs
  • 1 tsp chilli
  • 1tsp salt
  • 70 g melted butter

Method

Cut fish into smaller rectangles 3 cm wide and 8 cm long. Prepare a coconut marinade. Pour coconut cream, lime juice and salt into a bowl and mix. Place the fillets into it, cover and chill in refrigerator for one hour. In a time between, mix panko crumbs, coconut flakes and chilli flakes. Take fish fish out of the refrigerator and wipe off the coconut cream from the fish as much as you can. Dip the fish into the melted butter, toss it into the coconut-crumb mix and coat it from all sides. Place it on a baking tray covered with baking paper and bake it in the oven for 15 minutes on 200 °C. Serve with potato chips and zesty yogurt dip.
