Irresistible cloud chocolate cake recipe

This cake will make you feel like you’re on cloud nine! Try this recipe the next time you’re craving an incredibly light and fluffy texture, paired with a rich chocolate taste.

Ingredients

  • 180 g dark chocolate (60-70 %)
  • 55 g oil
  • 35 ml coffee
  • ½ tsp and one pinch of salt
  • 3 large eggs
  • 130 g sugar

Method

Start by preheating your oven to 175°C and greasing an 18 cm cake pan with oil. In a heatproof bowl, combine 180 g of chopped dark chocolate, 55 g of oil, and 35 ml of coffee. Melt this over a bain-marie, stirring occasionally. Once melted, take it off the heat and blend in 3 egg yolks, ½ tsp of salt, and 30 g of sugar. Stir in 35 ml of water until the mixture is smooth. In a separate clean bowl, beat 3 egg whites until frothy and then gradually add 100 g of sugar, continuing to beat until you get stiff peaks. Set aside a third of this meringue, and gently fold the rest into your chocolate mixture. Pour this combined mixture into your prepared cake pan. Dot the top with the reserved meringue and swirl it with a skewer or knife to create a marble effect. Bake in the middle of the oven for 45-50 minutes using top/down heat. Once done, serve it topped with soft whipped cream and amarena cherries.
