Upside down orange cake recipe

Ingredients
- 4-5 oranges
- 250 g caster sugar
- 2 tbsp orange juice
- 155 g flour
- 80 g semolina
- 2 tsp baking powder
- ½ tsp salt
- 3 large eggs
- 210 g olive oil
- 3 tbsp cointreau liqueur
- 1 tbsp orange zest
- ¼ tsp orange extract
Method
Preheat the oven to 200 °C. Coat the baking pan (25 cm) with oil and line the bottom with parchment paper. Slice oranges into thin slices. Squeeze juice from the reserved ends of oranges. Add 2 tbsp orange juice to 60 g sugar and mix. Pour the sugar mixture into the bottom of the prepared baking pan and spread it evenly. Arrange the orange slices across the bottom of the pan. In a medium bowl, sieve 155 g flour, 80 g semolina, 2 tsp baking powder and ½ tsp salt. In a large bowl add 190 g sugar and 3 eggs. Whisk for 5-7 minutes until ribbon stage. While whisking stream in the olive oil. Add 3 tbsp cointreau liqueur, 1 tbsp orange zest and ¼ tsp orange extract. Mix. Gradually mix in dry ingredients. Pour the batter over the orange slices. Place in the oven and lower the temperature to 180 °C. Bake the cake for 35-45 minutes. Let it cool to room temperature, remove it from the pan and slice it. Serve. Enjoy!
