Recipe for delicious red velvet truffles

Ingredients

For red velvet sponge:

  • 2 eggs
  • 110 ml buttermilk
  • 60 ml oil
  • 1 tsp white vinegar
  • 80 g butter
  • 200 g flour
  • 200 g sugar
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 tbsp dark cocoa powder

For cream filling:

  • 50 g butter
  • 200 g cream cheese
  • 2 tbsp powdered sugar
  • 250 g white chocolate

Method

In a large bowl add 2 eggs, 110 ml butter milk, 60 ml oil and 1 tsp white vinegar. Mix with a hand mixer. Pour in 80 g melted butter and add red food coloring. Mix until well blended. In a separate bowl mix together 200 g flour, 200 g sugar, ½ tsp salt, ½ tsp baking soda and 1 tbsp dark cocoa powder. Mix the dry ingredients with wet ingredients. Pour the batter into a greased 20 x 20 cm baking pan. Bake the cake for 20-25 minutes at 170 °C, with top/ down heat. Cool the cake and crumble it into a large bowl. Pour in 50 g melted butter. Add 200 g cream cheese and 2 tbsp powdered sugar. Mix until well combined. Scoop 1 tbsp of mixture and shape it into a ball. Dip each ball into a melted white chocolate and drain it. Remove the dipping stick from the ball and decorate as desired.
