Strawberry “cheesecake” chia cup recipe

Your new favourite prep-ahead breakfast is here! These strawberry “cheesecake” chia cups are creamy, fruity, and packed with protein – all with zero cooking required!
Ingredients
- 200 g cottage cheese
- 200 g fresh strawberries, halved
- 150 ml milk or plant based drink
- 1 ½ tsp vanilla extract
- 50 g maple syrup
- 70 g chia seeds
- 80 g greek yogurt
- 50 g fresh strawberries, diced
Method
In a blender, combine 200 g cottage cheese, 200 g fresh strawberries, 150 ml milk, 1½ tsp vanilla extract, and 50 ml maple syrup, blending until smooth and creamy. Pour the mixture into a jug, stir in 70 g chia seeds and mix thoroughly, then divide between two glasses. Cover and refrigerate overnight to set. Before serving, top each portion with a dollop of Greek yogurt and diced fresh strawberries.
