Ingredients

For starter:

  • 220 ml warm water
  • ½ tsp instant yeast
  • 150 g white bread flour
  • 30 g whole wheat flour

For the dough:

  • 230 ml warm water
  • ¾ tsp instant yeast
  • 1 tbsp sugar
  • 450 g white bread flour
  • 2 tsp salt

Method

Start off with mixing: 150g bread flour, 30 g whole wheat flour, ½ tsp instant yeast and 220 ml warm water. After that, cover the bowl and let it rest for at least 2 hours. Pour the starter into a mixing bowl and add 230ml warm water, ¾ tsp instant yeast and 1 tbsp sugar. Stir everything with a spoon. Add to the mix 450g bread flour and 2 tsp salt. Mix the dough with hook handle for 10-12 minutes and transfer it into a clean oiled bowl. Cover the dough and let it rest for 1-2 hours. After letting it rest, gently deflate the dough. On lightly floured surface, shape the dough into a round ball. Sprinkle it with flour and semolina. Following that, place the dough on a baking tray, cover it and let it rise until it’s puffy, approximately 45-75 minutes. Next step is selecting the StepBake mode. StepBake 1 is top-down heat at 250 °C for 5 minutes. StepBake 2 is top-down heat at 220 °C for 35-40 minutes. Make sure to dust the dough with flour. Cross-hatch the bread with a sharp knife or a lame and bake until perfection.
