Strawberry tiramisu

Strawberry tiramisu? Don’t mind if we do! Grab the ingredients and get ready to create this irresistible fruity dessert.

Ingredients

  • 400 g chopped strawberries
  • 100 ml water
  • 20 g sugar
  • 1 tbsp lemon juice
  • 2 eggs
  • 30 g vanilla sugar
  • 220 g mascarpone cheese
  • 80 g lady fingers biscuits
  • 2 tbsp chopped pistachios

Method

Dice 400 g strawberries. In a saucepan add 200 g diced strawberries, 20 g sugar, 100 ml water and 1 tbsp lemon juice. Mix and bring to a boil. Simmer for 8-10 minutes. Remove from the heat and strain the strawberries. Cool down the strawberry sauce. Over bain marie whisk together 2 egg yolks and 30 g vanilla sugar. Whisk for 2 minutes until light in color. Add tempered yolks to 220 g mascarpone cheese. Mix until combined. Over bain marie whisk 2 egg whites. Whisk until stiff peaks. Fold egg whites into mascarpone cream. Soak ladyfingers in strawberry juice for a few seconds. Cover the bottom of a glass with soaked ladyfingers. Pour over mascarpone cream. Add fresh strawberries and repeat all the layers. Finish with fresh strawberries and chopped pistachios.
