Ingredients

  • 300 g button mushrooms
  • 2 tbsp soy sauce
  • 1 tsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 shallots
  • 2 garlic cloves
  • 1 bay leaf
  • 180 g black rice
  • 1 tbsp dried mushroom powder
  • 450 ml vegetable stock
  • pinch of salt
  • ¼ tsp pepper

Method

Shape 300 g button mushrooms into skulls. Pour over 2 tbsp soy sauce, 1 tsp balsamic vinegar. dd 1 tbsp olive oil and mix. Place mushrooms on a baking tray. Roast them for 15 minutes at 200 °C. Saute 2 diced shallots until translucent. Add 2 garlic cloves and all saute for 2 minutes. Add 180 g rinsed black rice. Saute for 2 minutes. Add 1 tbsp dried mushrooms and 1 bay leaf. Pour in 450 ml vegetable stock. Stir and cook for 15-18 minutes. Season with a pinch of salt and ¼ tsp black pepper. Let the risotto sit for 5 minutes. Cover with skull mushrooms and serve.
