Red Lentil Nuggets Recipe
Easy and simple red lentil nuggets recipe prepared with AirFry technology.
Ingredients
For nuggets:
- 300 g sweet potato
- 1 ¼ tsp salt
- 400 g cooked split red lentils
- 1 ½ tsp garlic powder
- 2 tsp garam masala
- 1 tbsp onion powder
- ¼ tsp chilli powder
- 40 g grated parmesan
- 90 g sundried tomatoes
- 1 egg
For breading:
- panko crumbs
- 2 eggs
Method
Sprinkle 1 tsp salt over 300 g finely grated sweet potato. Mix and let it sit for 10 minutes. Add 400 g cooked red lentil into food processor. Mix for 2 minutes. Transfer lentils to a large bowl. Transfer lentils to a large bowl. Add 1 ½ tsp garlic powder, 2 tsp garam masala and 1 tbsp onion powder, ¼ tsp chilli powder, 40 g grated parmesan, 90 g chopped sundried tomato and 1 egg. Drain grated sweet potatoes and add them into a bowl and mix well. Shape 30-35 g nuggets. Coat each nugget with egg wash and panko crumbs. Place the nuggets on a shallow perforated baking tray. Select the AirFry mode and preheat the oven to 200° C. Insert the tray at level 4 and bake the nuggets for 20 minutes.
