Recipe for tropical salad with curry dressing

Ingredients
For salad:
- 1 large cucumber
- 1 mango
- 2 green onions
- 100 g small peppers
- 1 small avocado
- 1 lime
- 50 g cashews
For the dressing:
- 200 ml canned coconut milk
- 2 tsp red curry paste
- 2 tsp chopped fresh mint
- ¼ tsp salt
- ¼ tsp ground cumin
Method
Thinly slice one large cucumber. Dice one mango. Slice 2 green onions and than thinly slice 100 g small peppers and one small avocado. Add all the vegetables into a large bowl. Add juice of 1 lime and mix well. n a separate bowl pour 200 ml coconut milk. Add 2 tsp red curry paste, 2 tsp chopped fresh mint, ¼ tsp salt and ¼ tsp ground cumin. Mix well and set aside. Toast 50 g cashews. Transfer the salad on a serving plate. Transfer the salad on a serving plate. Top the salad with toasted cashews and curry dressing.
