Lemon crisp cookies
This recipe will save you when you’re having unexpected guests over, because you only need five ingredients that are certainly in your cupboard and fridge. They are also a great choice when you’re baking with kids, because you don’t need to roll them out so thin and the kids can easily cut them. Oh, and they taste great, too!
Ingredients
- 350 g flour
- 200 g butter
- 120 g sugar
- 2 lemons
- 2 egg yolks
Method
Combine flour, sugar, grated lemon zest and cold butter. Mix the ingredients in a stand mixer, add lemon juice and egg yolks and mix for a few more minutes. Wrap the dough in a plastic wrap and refrigerate for half an hour, then roll out the dough and cut out the cookies. Bake for 15 – 20 minutes at 180 °C. Let the cookies cool and sprinkle with sugar.
