Fondant sweet potatoes recipe

Ingredients
Fondant potatoes:
- 1,2 kg sweet potato
- 2 tbsp olive oil
- 20 g butter
- 2 garlic cloves
- ½ tsp salt
- ¼ tsp pepper
- 250 ml vegetable stock
Spicy salsa:
- ½ fresh chilli
- 50 g dried tomatoes in oil
- 20 g fresh basil
- 30 g toasted pine nuts
- 2 tbsp balsamic vinegar
- ½ tsp salt
- 90 ml olive oil
Method
Preheat the oven to 200 °C. Peel 1,2 kg sweet potatoes. Slice them into 4 cm thick slices. Heat up 2 tbsp olive oil in an oven proof pan. Add 20 g butter. Place the potatoes in a pan and sear them for 5-6 minutes. Carefully turn over the potatoes. Add 2 garlic cloves. Season the potatoes with ½ tsp salt and ¼ tsp pepper. Sear them for 5-6 minutes. Pour in 250 ml vegetable stock. Place the pan in the oven. Roast the potatoes for 40 minutes. Finely chop ½ fresh chili. Finely chop 50 g dried tomatoes. In a bowl add chili, tomatoes, 20 g chopped basil and 30 g roasted pine nuts. Add 2 tbsp balsamic vinegar and ½ tsp salt. Pour in 90 ml olive oil and mix. Serve the potatoes with spicy salsa.
