Cracked cookies
These cracked cookies are crunchy on the outside, but chevy on the inside.
Ingredients
- 250 g coconut flour
- 120 g chocolate powder
- 100 g ground wallnuts
- 250 g powdered sugar
- 3 eggs
- Additional powdered sugar
Method
Separate the egg yolks from the egg whites. Beat the egg whites until firm peaks form. In a large bowl mix together the dry ingredients: coconut flour, chocolate powder, walnuts and sugar. Stir in the egg yolks, then fold in the beaten egg whites. At first you might think that the mixture will not combine, but rest assured, all is well.
Now it’s time to get your hands dirty! Or, even better, get your kids to help. Form the dough into one-inch balls and roll them in powder sugar. Place them on a baking sheet around two inches apart.
Bake the cookies for 5 to 8 minutes at 200 °C or until the cookies start to crack. Don’t worry, if they still seem soft, when you take them out. A crust will form once they have cooled down, but the centre will stay nice and chewy.
