Strawberry souffle

This yummy and an eye-catching dessert could be something to surprise your beloved ones with. Only few ingredients and simple procedures can do the magic. Put it on a table on that special day and watch their positive reactions.

Ingredients

  • 150 g caster sugar
  • 300 g strawberry puree
  • 15 g cornflour
  • 3 egg whites

Method

Preheat the oven to 190 °C. Brush the inside of ramekins with melted butter. Cover the insides with caster sugar and remove excess sugar from the ramekins. Place the ramekins into the freezer to chill until needed. Make a strawberry base. Pour 150 g strawberry puree into a small pot. Ad 70 g caster sugar. Mix, boil and let it simmer for a minute. Meanwhile in a separate bowl mix together cornstarch and 3 tbsp water until smooth and add cornstarch mixture into strawberry puree. Cook on low heat for 5 minutes until it thickens and stir constantly. Let the strawberry base cool to a room temperature. Add eggs whites and gradually add 80 g caster sugar. Whit until stiff peaks. Add 80 g fruit base into a bowland add 1/3 whipped meringue and mix it well. Gradually fold in the rest of the meringue. Place the batter into a piping bag, fill the ramekins to the top and make them even. Run the edges with a knife to release the batter from the ramekin. Bake souffles for 10 minutes, remove them from the oven, pour over the rest of strawberry puree and base mixed with fresh strawberries. Serve immediately.
