Spring salad
This simple side dish is “Spring in a bowl” and can become a celebratory salad for many different occasions or any Spring gathering. Fresh, tasty and above all – eye catching.
Ingredients
- 300 g baby spring lettuce and edible flower blossoms (violets, primroses and pansies)
- 100 g baby spinach leaves
- 1 hard-boiled egg
- 80 g pecorino cheese
- 100 g cherry tomatoes
Salad dressing: 3 tbs olive oil, 2 tbs balsamic vinegar, Salt and pepper
Method
Mix baby spring lettuce, spinach leaves and edible flowers in a bowl and pour over the dressing. Place the salad on a large plate and top it with halved cherry tomatoes, sliced egg and grated pecorino.
