Fruit cake omelette on table

Taste the sweetness of summer with this easy and super delicious fruit cake omelette recipe. Summer never has to end!

Ingredients

For the cake:

  • 3 eggs
  • 40 g sugar
  • 30 ml milk
  • 30 g flour

For the topping:

  • 2 tbsp apricot marmalade
  • 120 ml whipping cream
  • 1 nectarine
  • 1 banana
  • 100 g white grapes
  • 50 g raspberries
  • 1 tbsp lemon juice
  • 10 g vanilla sugar

Method

  1. Preheat the oven to 200 °C.
  2. Separate 3 egg yolks from egg whites.
  3. Add 40 g sugar to egg yolks.
  4. Beat egg yolks for 2-3 minutes.
  5. Sieve in 30 g flour and pour in 30 ml milk.
  6. Mix well with spatula and set aside.
  7. Beat 3 egg whites until stiff peaks.
  8. Add whipped egg whites to the yolk mixture.
  9. Pour the mixture into an oiled cake pan 22 cm wide.
  10. Bake cake for 12 minutes with top-down mode.
  11. Slice nectarine, banana, add grapes, top with lemon juice and vanilla sugar. Mix.
  12. Remove the sponge from the oven.
  13. Spread over apricot marmalade.
  14. Top with whipped cream.
  15. Garnish with fresh fruit, add raspberries and serve.
