Roasted glazed carrots

Ingredients
- carrots
- olive oil
- herbes de Provence
- salt
- pepper
Dressing: honey, mustard, apple cider vinegar
Topping: pine nuts, pomegranate, micro greens
Method
Peel the carrots. Coat them with olive oil and season with herbes the Provence, salt and pepper. Place on parchment paper and roast for 30 minutes in a pre-heated oven, or sauté them in a frying pan. Then, prepare the dressing: combine the honey, mustard, salt, pepper, and apple cider vinegar. Mix thoroughly. Pour the mixture over the roasted carrots and add roasted pine nuts, pomegranate and micro greens.
